I cannot even get myself to stand and stir those watery tomatoes for hours after defrosting them before I can get my favourite chicken stew done. Don’t even get me started on the slashing ….uuhhh! Things I hate while cooking.
I bet you want me to dive straight into it …
STEP ONE: WASH YOUR FRESH TOMATOES PROPERLY TO REMOVE SAND AND DIRT. THEN PACK THEM IN A BAG OR BOWL AND FREEZE.
STEP TWO: BRING THEM OUT OF THE FREEZER AND PUT THEM IN A SIEVE AND ALLOW TO DEFROST AND DRAIN. DON’T FORGET TO PERFORATE THEM WITH A KNIFE OR A FORK WHEN THEY ARE A BIT SOFT.
STEP THREE: PRESS OUT THE LEFTOVER FLUID WITH YOUR FINGERS AND …
BLEND PROPERLY … NOW YOU CAN ADD YOUR GINGER, ROSEMARY AND GARLIC
BLEND TO DESIRED TEXTURE…

POUR INTO THE POT AND ADD YOU OIL AND CONTINUE WITH YOUR FAVOURITE NIGERIAN STEW RECIPE.

This saved me a lot of time and I have been using this hack for a while now. Let me know if you will try it out.
The only downside is that you might have to shop for your tomatoes a day prior to when you actually want to make the stew. You can also freeze and defrost overnight. That way you tomatoes is ready to be pureed for the stew.
